Well, it kinda worked! The "poto" did rise beautifully, but it was pretty dense. The recipe I used called for 2 cups of flour....but that yielded a very runny batter. So, I added about 5-6 cups of my hand ground flour....all of it!!
I will have to grind some more rice and play with the mixture. The store bought rice flour is too fine to work with the Chamorro type of poto.
Alas, I don't know that I want to grind rice on my board again. I will order a corn grinder on-line and hopefully that will work. UNLESS, someone has a mitati laying around and wants to give it to ME!!!! I will happily trade it for some Remember Guam books when it is published!
Or, perhaps my very handy brother or dad will fashion me one out of the rocks on Guam...you know, a legacy to be handed down to their descendants!
I also may have stumbled upon a way to get around the TUBA!!! But that, my friends, will be for another post!!
UPDATE: Oct. 27, 2014 - the photo above is my MIL's finalized recipe. It is the "Poto III" in Remember Guam.
