EGGPLANT IN COCONUT MILK

I was never really an eggplant kind of gal, but I love this recipe!! It is the perfect blend of lemon and coconut milk with the zing of eggplants!!!!!

Here's a link to the video. Who needs salsa when you have this delicious treat! In Chamorro, it's called fina'dennen birenghenas. Sometimes we just say it's eggplant in coconut milk.
