Yum, my kalamai recipe (the one that had an after-feel...when I added the cornstarch in at the end) is actually VERY DELICIOUS! It had to sit overnight to lose the after-feel, but it is really good!
The recipe from the old Chamorro language book......not good at all.......
So, I am quite satisfied with my first kalamai that I made. Although the surface cracked in the tray, I ABSOLUTELY LOVE the TASTE AND TEXTURE of this kalamai. I am also very pleased with my second recipe (the one mentioned above). After a day in the fridge, it was a little different than recipe #1, but delicious!
Perhaps I'll wait a while and try to play with the recipe again. So far, I've made 4 attempts..... two very successful and two complete downers.
I made kalamai in college and in Germany. I remember them tasting very good.....and cracking on top, but not very much. I am not sure what I did differently......that's why it is SO IMPORTANT to write things down eh!!!!
