Apigige' - a sweetened blend of grated tapioca and manha (young coconut), wrapped in banana leaves. Ah, and the banana leaves make all the difference.....it's the smell, it's the taste!
I made apigige' last week..........it's been over 15 years since I last made it. It turned out perfect! I was so mahalang making this. It's been a long time since I felt as "close" to home......something about listening to Chamorro music and cleaning banana leaves.
My brother also made eskabeche and fritada! It was all delish! I recorded Jun making the fritada. I'll give it a go myself sometime.
