My favorite kelaguen is deer kelaguen or kelaguen binadu. The meat is so soft and really captures the essence of kelaguen. Kelaguen is basically "cooking" raw protein in lemon and salt.
Two weekends ago we visited family in South Carolina. Nina and nino sent me back home with the meat from a deer's hind leg; Nino loves to hunt and I always look forward to their teriyaki deer and cousin Jame's deer kelaguen.
I made my first deer kelaguen a week ago and I have to say that it was just as delish as cousin Jame's. Of course, I took notes from him. Here is my written deer kealguen recipe.
