Ahu and titiyas for snowy days and freezer food - January 4, 2018

It snowed last night here in Holly Springs, NC -- and that means kids sleep in while momma cooks!
I made ahu for Christmas -- and the recipe in my cookbook, A Taste of Guam -- freezes, thaws, and reheats quite well. I love this practice of making a ton of food for my freezer -- a necessity to remain healthy as a travel softball family.
Amazon sells good quality restaurant to-go containers -- perfect for freezing small serving sizes that thaw quickly. I also find that freezing in small containers reduces wasted food. Ahu is a sweet dessert soup made of young coconut flesh -- the coconut in which the husk is still green -- sugar, water, and tapioca starch. Here's a video on how to make ahu. Flour titiyas, or tortillas, are a quick venture in the kitchen -- and this recipe in A Taste of Guam freezes well too. I keep them in tortilla warmers until they are completely cooled -- then wrap in plastic wrap and freezer bags for future meals. The measurements are in the video -- but must be watched on something larger than a phone.
