POTO

POTO.......

Today, I am on my 3rd try within 2 days.......probably my 8th try since 1993. It would be much easier if someone just gave me the recipe and showed me how to make poto!!!!

So, I have tried grinding the rice....but it seemed like not enough water. I have tried the Bisquick & rice flour version, I tried the groud rice again, then the rice flour only. Today's attempt was rice flour with a twist. Though not the Chamorro poto, it is getting closer!!

At the moment, I have long grain rice soaking in a manha juice -vinegar-sugar liquid. I will grind it tonight or tomorrow morning. Then, we'll see. I will try steaming it without additional ingredients (as folks in Malaysia do), try it with beer and more sugar (as my old Chamorro cookbook instructs) and finally, try it with just a bit of rice flour (per my trial & error).

If anyone out there would so kindly share their poto recipe, I, along with many other Chamorros, especially a young man coming home from Iraq, would forever be grateful!!

I don't know how much more "poto", "puto", "potu", "putu", "white sugar sponge cake" I can stuff down!!

I would love to move on to the next recipe!!

UPDATE: This picture is from the "Poto III" recipe in Remember Guam. Here is the link to the video.
