SHRIMP PATTIES


OMG, OMG, OMG! I am not a fried food kinda gal, but the ones I made were sooooooo good. You know, the ones that are so soft, and eggy, custardy, yumumy, mm, yes, they were really good.

You know me, I have learned to be weary of shared recipes. I called my mom to ask her how she made her shrimp patties. I took her suggestions under advisement. I looked through my old cookbooks to see what they had. I thought about other foods that were eggy (french crueler doughnuts, cream puff dough). And, voila, OMG, these tasted even better at the end of the day when they were cold!

This is one food in which the recipe is dynamic....that is, the batter changes as you go. Hence, you have to add a little more flour, a little more baking powder and up the heat some.
