POTO VII



Ah, I am still at it. Mom Q. made some delicious poto last weekend....and I ate half the batch....really, half....and that was a large batch. As I have said before, IT'S A DARN GOOD THING I WORKOUT!

While it was the best poto I have had, mom did use rice flour, Bisquick, regular flour and yeast. So, at this very instant, I am making a go of poto again. I am soaking my rice in a mixture of water, coconut vinegar, beer and sugar. I will dry it in the oven then grind the rice to a powder. I plan to use yeast and water, let it sit for an hour then steam it. When I used home-ground rice flour before (with coconut milk), it turned out delicious and the texture was PERFECT. However, it did lack the fermented aroma / taste. We shall see.

Tomorrow, I will make pantosta and video tape the process. It will mark 7 recipes down and 13 to go on video. Progress is in full swing and the road to completion is well on its way.
