Well, my manha pie for christmas turned out ................... PERFECTLY DELICIOUS!!! OMG, it was just as I remembered it! And, I even tested out some better techniques to prevent the meringue topping from weeping......a combo of the techniques gave me a perfect pie!!!!
Initially, I thought it was too much cornstarch, and an unusual way of combining the cornstarch, eggs, and water. However, the pie, especially on day 2, was fabulous!!! I will have to try to decrease the cornstarch and combine in a more traditional "order of operations" so to speak. I may also add a bit more manha.
By the way, you can buy canned manha at an Asian store. It is more firm than fresh, younger manha, but it works great for this pie. I cut the manha in about 1 cm squares.
Once I try it again, I'll work on posting it to my site.
