Guam Crown Bakery chocolate cookies

Crown Bakery on Guam is just the best! They have excellent baked goods and the owner, Mary Morato, is awesome.

OMG, these cookies are so tied to my wonderful childhood and teen years on Guam. I actually developed this recipe when someone else wouldn't share their own discovery. Prior to my recipe, my mom would always have to bring over dozens of the bakery's chocolate cookies when she came to NC to visit. On other years, I'd ask for some via the mail. The problem though was that by the time I'd eat the hand-carried or mailman-delivered cookies, they would be dry and crunchy. Now, my family and I enjoy these cookies any time of the year and they are wonderfully soft -- just like I remember them from Crown Bakery. You can get my "Crown Bakery" chocolate cookie recipe right here...so much easier to link to my recipe than it is to have to rewrite it or copy & paste.

These cookies are perfectly shaped thanks to a small cookie/ice cream scooper. The raw dough is rolled in sugar then pressed on the cookie sheet with one palm.
