Guam tuba vinegar fina'denne'



I brought "fresh" tuba in my checked baggage/cooler back from Guam at the end of 2013, frozen of course. When I got back to NC, I took a cup of that sweet, delicious tuba and stored it in a mason jar. I tasted the tuba every day for the first week to see how long it took to turn to vinegar. OMG, it turned within four days. It started to take on some sour though it was still sweet. But by the 6th day, it was much too sour to enjoy. By the eighth day, it took on a bitter flavor. A couple of weeks after that, it was good vinegar. Here's my recipe for binaklen tuba fina'denne', or tuba vinegar fina'denne'.
