Guam red rice with chicken kelaguen and titiyas is CRAZY GOOD! OMG, to this day, I can only make Guam food once in a while. More often, and, well, it would not be pretty! The trick to making good titiyas is to add butter and don't knead the dough too much. The flour titiyas will turn out pillow-like soft. I love my titiyas recipe, especially the next day. Use the Mexican-style tortilla warmer to keep your titiyas soft and warm as you cook up the entire batch.
Open up one napkin then put a piece of wax paper on top of the napkin. The napkin prevents the titiyas from getting wet as they cool. The picture below is the tortilla warmer I use, except I have manha titiyas in it. Here's my manha titiyas recipe.
