I made bonelos yeast this past Sunday. I didn't want to fry it all so I made 2/3 of the dough into pan tosta. I love the texture of this dough as pan tosta. It doesn't get soggy and fall into the coffee. The crumb is somewhat bigger than the crumb of my actual pan tosta dough, and it's not as hard.
All you have to do is make the bonelos yeast dough up until you have to shape it -- then go to the step on shaping dough for pan tosta.
