Busy moms need to put relatively healthy food on the table fast! Turnovers, while initially time consuming to make, are the perfect "fast food" to keep in stock. I've taken the chicken ala king filling that many Chamorros love in the fried, crispy cups - and put it into turnover pastry. Once the turnovers are filled and sealed, they keep extremely well in the freezer. All you have to do is preheat your oven, brush an egg wash over each frozen turnover, and bake for 30 minutes.
The chicken ala king filling has tons of veggies - onions, celery, garlic, peas, carrots, corn, and green onions. The thickening agent is a little bit of the crispy shell batter - eggs, flour, sugar, salt, butter, and beer. Chicken stock and evaporated milk make up the stock while much of the filling is chopped, cooked chicken, cubed potatoes, and hard-boiled eggs.
I'm still working on typing up the dough recipe and putting it on my site, paulaq.com. It's buttery and flaky - and works very well with homemade apple filling, and cheesy-bacon scrambled eggs too.
I cringe when I run out of homemade "fast food." While my family gets freshly made eggs just about every day, and most-of-the-time a homemade carb, I love being able to pull stuff out of the freezer when I'm just too lazy to make a mess in the kitchen.
