My recipe for Guam flour tortillas, or titiyas arina, freezes, thaws, and reheats very well! As for other Chamorro titiyas recipes, you'll have to freeze a few and see how they turn out after being frozen. I've been a mad woman in the kitchen these past few months. I realized that to keep up with the kids and still be sane and healthy, I had to cook in humungous batches. Anything that freezes, thaws, and reheats well -- well, I'm doing it.
The flour titiyas recipe in my cookbook, A Taste of Guam, is soft and fluffy. My son loves it with butter and jelly on top with fried Spam on the side. My daughter, on the other hand, prefers a little bit of butter -- then topped with fried Spam.
I cool the titiyas in a covered dish to keep it soft. Once they are completely cooled, I separate each disc with wax paper, and wrap with a sheet of wax paper, a napkin, and two layers of plastic wrap -- then in two Ziploc freezer bags -- wrapping overkill probably! The napkin will absorb condensation when the titiyas thaw.
