Abas (guava), laguana (sour sap), manha (young coconut), babui halom tano (wild pig).....a few of the foods I saw on the updated "Swiss Family Robinson" dvd my husband rented.
Talk about homesick: the ocean, the fish, the jungle, the sand.......and oh how the pigs looked on that spit!!! They were roasting pigs as we do on Guam! Oh, I was bawling at the end of the movie because I was so mahalang! I was educating my children that grandpa grows this in his yard or that in his yard....
Now, back to the pig! For those of you who have tried the crispy, brown pig skin, fresh off of a roasted pig OMG, OMG!!!!!!! Well, those unaccustomed to such a treat may wonder why, when they get to the pig on the table, the pig is skinless...left with meat and bones. IT IS SO GOOOOOD that if you want it, you get to the front of the line.....or you desperately ask a grown-up to cut you a piece.
On that note, during my trips home on vacation, my best friend Mel Quintanilla knew exactly what I wanted to eat....and cheerfully obliged: bbq PORK BELLY!!!!! Ah, bbq-burnt fat, meat and fina'denne'!! You know, though I am in the health & fitness field, I happily enjoy my pig treats once every few years!!
Tomorrow I am testing my mother-in-laws yeast doughnut recipe. Her doughnuts are sooooo delicious....she perfects everything she makes, so its all delicious. But, I do need to be able to replicate it, hence, I will be enjoying that cinnamon / sugar dusted treat in the morning! Want some? If you live in Holly Springs, NC, call me at 919-454-4741.
