Ah, so I had some very delicious poto down in Fayetteville not too long ago. Mom Q got the recipe from the maker. I tested it Wednesday night and it did not turn out!!!! Uggggg!!! How frustrating, BUT I am not one to give up.....what's another year to the decade plus I have already put in eh!!
So, I may try the recipe again but add a bit more rice flour...and more bisquick. Yes, though the aforementioned recipe is not the traditional Chamorro poto, it was delicious, springy & soft, and did have a hint of fermentation......it was the closest, most delicious one I have tasted since all the ones I have tried on Guam. I will also attempt to marry this recipe with my coconut milk version.
And the journey continues........
