Oh, I am listening to KC and I am so mahalang!! How blessed I am to be a Chamorro, to have grown up on Guam with my family!!
Speaking of which, two of my siblings and their family were here for Christmas, with my husband, kids and in-laws, truly, I am very blessed!
On that note, I did try several recipes for Remember Guam: dinanchen birenghenas and shrimp kelaguen.
Of course, my poto saga is still alive!! My mom gave me the first edition of Lepblon Fina'tinas Para Guam (by Inetnon i Famalaon) years ago. In it, she wrote a poto recipe which was very similar to the Fayatteville recipe. OMG, two trials and no luck!!!!! Ugh, what a process. But, I will attempt again.
My mother-in-law and I were invited to make poto in Fayatteville, so I will definitely take up the invitation!!!
So far, my version of poto with homemade / home-ground rice flour, coconut milk, palm vinegar and baking powder is the only workable recipe I have. I love it and the next time I make my poto, I will add more palm vinegar....as the fermented taste / smell is all it lacks.

I also maded my 4th attempt at the poto-- to no avail. I don't have the tuba, and have substituted with the Japanese plum rice wine (Plum Saki,) and the flavor was wonderful. Got the taste down, but just can't seem to get the nice fluffy texture.

Hafa Adai Mona-Lisa! Any luck with the poto? I have 3 versions of it in my REMEMBER GUAM book, due out July 2009. I ground my own rice flour and loved the texture. However, I couldn't quite get the flavor. Perhaps you could use my recipe and combine with yours to get something very close to the Chamorro poto!
