Imitation Crab Kelaguen



I had some leftover imitation crab from my brother's visit. Chamorros love to kelaguen everything, including imitation crab. Kelaguen is basically "cooking" raw "meat" in lemon and salt.

Chicken is partially cooked then "kelaguened." Raw beef, deer and shrimp become safe to eat once "kelaguened." Of course, spam and imitation crab are already cooked, but must be soaking in lemon to taste yummy.

Most kelaguens include freshly grated coconut. Other than shrimp kelaguen, you can generally get away with omitting the coconut when none is on hand.
